The only game I know of that comes close is Age of Empires 2. In the Conquerors expansion, the Koreans are one of many civilizations you can choose to play as. The kings or leaders of the civilization you choose are famous rulers, generals, etc. of that particular civilization. In the game, for the Koreans, they have Wang Guhn, King Sejong, Yi Soon Shin and a few others.

There's a game called Imjinrok by HQ soft on Korea.
It's an RTS about this war.
It's a few years old though. You probably won't be able to find it, definitely not anywhere outside of Korea, and probably difficult in Korea too.
