I don’t think anybody’s ever figured out exactly what the chorus is singing in the show’s main theme. K-drama fan
webcolorchart says it doesn’t sound like Korean, and that perhaps it’s actually sung in Latin (that wouldn’t be the first time: the theme from the MBC series “5th Republic” was also sung in Latin).

It’s interesting that this song was not only performed in Italian by Korean soprano Koh (sometimes Romanized as “Go”) Jin-young, but that she also wrote the Italian lyrics. Here’s a brief biography:
“Koh Jin-Young graduated from Seoul Arts High School, and while
attending the department of vocal music at Ehwa Women's University,
went abroad to Vienna, Austria, and graduated from the department of
opera at Vienna City Conservatory, attended Vienna International
Master Class and other classes.
”After returning to Korea, she gave many vocal recitals, and
published Italian Song CD (Arie Antiche) in 2001. She studied with
Yoo Tae-Yeol and Lee Gyu-Soon in Korea and with Elsa Kastela,
Waldemar Kmentt, David Lutz and Norman Shelter abroad. Now she
lectures at Seoul Artspool Conservatory, Keywon Arts High School,
Dukwon Arts High School.”
